What is the difference between extension wires and thermocouple wires?

Extension wires are used to connect thermocouples to instruments over distances and are rated for lower temperature ranges (typically up to 200°C). Thermocouple wires are used to make the actual sensing junction and are rated for the full temperature range of the thermocouple type (up to 1200°C for Type K). Using extension wires beyond their temperature rating causes measurement errors.

Can I use ordinary copper wire instead of proper extension wires?
